This is a really easy to make fruit loaf that never lets me down. It’s tasty and nutritious and suited to eating anytime. It’s easy to slice and wrap up to take out on the hill for an energy packed treat.
Nutritional content for the whole loaf: Energy 2385 KCal; Carbohydrate 497g; Fat 15g Protein 42g; Fibre 48g
At 12 slices per loaf, the nutritional value per slice is: Energy 188 KCal; Carbohydrate 39g; Fat 1.2g; Protein 3.3g; Fibre 3.8g
Ingredients and method:
Put these ingredients into a bowl and mix well. Leave to stand for between 30 minutes and an hour, mixing once or twice.
Then add: 4 oz / 115g flour and mix well.
Put the mixture into a greased and lined 2 lb loaf tin ( I use greaseproof cake tin liners)
Bake on middle shelf at 350 degrees F / 180 C or gas mark 4 for about an hour. Turn it at 30 minutes.
To test if its ready, insert a skewer or toothpick into the middle of the loaf. If it comes out clean then it’s done. If it comes out a bit sticky then give it more time but check every five minutes or so. Leave to cool on a wire rack then……………
