Red coleslaw

This is a deliciously fresh and crunchy alternative to regular coleslaw which is a great accompaiment to chicken or salmon salad. A favourite of mine is to add it to wraps with hummus and avocado.

Ingredients:

  • 250g red cabbage – finely chopped
  • 1 medium red onion – finely chopped
  • 1 large or 2 medium carrot – grated

Mix them well together in a bowl.

For the dressing:

  • 2 tablespoons olive oil
  • Juice of one lemon or 2 tablespoons balsamic vinegar
  • 2 teaspoons honey or maple syrup
  • Half teaspoon mustard powder
  • Salt and pepper

Mix all ingredients well together. Pour over the coleslaw and mix well. Keeps well covered in a fridge for 3-4 days.

 

The end goal is a bonus - it's the journey that changes us
