Step 14 – I found easy ways to eat more vegetables

Working long days and lacking enthusiasm or imagination for cooking at the end of the day, it was all too easy to eat unhealthy foods. I looked for easy ways to eat more vegetables.

From baking sweet potatoes, boiling, steaming or sauteeing a selection of vegetables; stir-fries and soups and even adding to smoothies, I introduced a greater variety of colours and healthy options to meals.

Here’s a simple, tasty choice and takes only a few minutes to make.
