Working long days and lacking enthusiasm or imagination for cooking at the end of the day, it was all too easy to eat unhealthy foods. I looked for easy ways to eat more vegetables.
From baking sweet potatoes, boiling, steaming or sauteeing a selection of vegetables; stir-fries and soups and even adding to smoothies, I introduced a greater variety of colours and healthy options to meals.
